It appears the functionality for changing the color of an existing tag is broken in iOS and iPadOS. I am using the latest app versions and whenever I attempt to change the color of the tag it appears to take then I get an error indicating “unable to sync”:

Sincere apologies for the trouble here. I’m afraid that it is currently not possible to modify the color of a tag while using the mobile app. This is only possible on the web version!
